In case you haven't noticed, the chicken sandwich wars are officially on. Every fast food joint is claiming they have the best chicken sandwich. It started with Chick-Fil-A but now everyone is trying to knock them off the podium. You have Popeyes, Shake Shack, KFC, and now even McDonalds, Wendy's, Burger King, and Panera. Well, I wanted to try to recreate it at home only vegan style using cauliflower. Feel free to substitute chicken instead, but note, cooking times may very.
Ingredients
- 1 head cauliflower cut into chunks
- 3/4 cup flour
- 1/4 cup corn starch
- 1/2 tsp baking powder
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper
- 1/4 cup pickle juice (or pickled jalapeno juice)
- 1/4 cup unsweetened milk substitute
- 1/2 cup water
- 1/2 cup panko bread crumbs (if oven baking)
- 3-4 cups frying oil (if frying)
- side of pickles and hot sauce
Directions
- Preheat 450 degrees or oil to 375 degrees.
- Wash and thoroughly dry the cauliflower chunks.
- Mix all the batter ingredients except the panko bread crumbs together in a bowl or Ziploc bag.
- Add the cauliflower chunks and toss until coated with the batter.
- Remove the cauliflower chunks from the batter and drain off any excess batter.
- If frying, gently slide 1/2 of the cauliflower chunks into the frying oil and fry for 7-10 minutes until the coating turns golden brown. Then repeat with the other half making sure the oil returns to 375 degrees between batches.
- If baking, return the cauliflower to a clean bowl or Ziploc bag and add the panko bread crumbs and toss to coat. Place the cauliflower chunks on a foil lined baking sheet. Bake for 20-25 minutes until golden brown.
- Serve with pickles and hot sauce on the side for pairing and dipping.
